Bibidi-bobidi-boo!

I am super late writing about this, but in January we had magic in Denmark.  C's godmother, American R, came to visit!  She is the best.  I'm going to mostly let her photos speak for themselves, but I'll just add that her visit was the best way to kick off the new year!

Look, here she is in her natural habitat right in front of a castle, just like any self-respecting fairy godmother!

Behold the Beet-wich!

This winter I discovered an awesome sandwich.  It's simple, yet unexpected: almond butter, avocado, and beets.  There's no way you can go wrong.  So far I've had it with roasted golden beets on spelt toast, with shredded raw beets and rye berries inside a tortilla, and now--and most elegantly--with beet sprouts on buckwheat bread.





Do try it, in any variation on the above.  It's yummy!  While you're eating, enjoy this clip from The Office.  I always think of it when eating beets.

And you thought I just wrote about chocolate all the time.

Because of Babies and Brownies

I'm pretty sure most of the readers of this blog just want to see more pictures of tiny C, so this post will probably make their day!  Sorry it's been so long in coming.

The thing is, C keeps me pretty busy, but that's really no excuse.  Lots of people have a  kid--some even have more than one!--and they still manage to get stuff done.  The real truth is that blogging isn't always my top priority.  For instance, on Sunday C was napping, and did I blog?  No, instead I made brownies.

I'll digress here and point out that it's still cold and still snowing, and brownies were clearly the only way to go.  Also, I've found a new brownie recipe which is possibly the best vegan brownie I've ever made or eaten.  It's here.  I was skeptical at first, because of the banana, but you really can't taste banana!  And trust me, I am not one of those vegans who eats brownies made out of dates, walnuts, and carob, and claims they taste just like a real brownie.  They do not.  But this one is seriously good, so make it and be happy.

Or if you don't want to make brownies, you can just look at the baby pictures and be happy that way instead.

Because babies and brownies may make for bad bloggers, but they make us pretty happy too.

B's Birthday Baguette

It was B's birthday last month (I know, I know, I'm such a slow blogger!), and he is now 31.  Go B!

On the day of his birthday I didn't have time to make a cake, but he deserved something festive.  I bought him a baguette and these awesome Danish candles instead.

They say "Congratulations!" which is what Danes say on birthdays.

In any case, I did make B some delicious double chocolate cupcakes on the weekend.  We celebrated in fine ScandinaVegan style with a trip to Cafe Gaya (which is exactly as hippie-ish as it sounds) and tasty cupcakes at home.
